Castilla Restaurant is located in the heart of downtown Bellevue featuring dishes inspired by Spain's diverse culinary traditions, as well as inventive new creations that marry modern techniques and traditional flavors.

Award-winning chef, Clara Gutierrrez Carroll, has tapped into the unexplored terrain of contemporary Spanish rice and pasta dishes to go beyond traditional paella, using it as a technique and genre that highlights the texture of the rice and pasta rather than accompanying ingredients. Along with succulent "Tapas" dishes and assorted classics from Spain, Castilla brings wine expertise of the Rueda, Toro & Ribera del Duero regions of northern Spain.
