Eques serves fresh a la carte breakfast and contemporary buffet seven days a week using high-quality, locally-sourced ingredients that highlight the bold, natural flavors of Pacific Northwest ingredients.

The décor of Eques is modern and, when combined with fresh à la carte menu and buffet options, it sets the scene for the perfect power breakfast in Bellevue. Debut items will include Signature Eggs Benedict served three ways; with shaved prosciutto and citrus cream, locally smoked salmon and dill cream, or Alaskan Dungeness crab and caper cream; Honeycrisp Apple Stuffed French Toast with spiced mascarpone, caramel, vanilla bean crème and candied walnuts; and the gluten-free 425 Pork & Eggs, which includes pork shoulder braised for seven hours, served with two cage free eggs, roasted green tomatoes, avocado and house potatoes. The 129-seat restaurant is located on the second floor of the Hyatt Regency Bellevue in the Wintergarden atrium.
